Fabulous small fluffy pancakes

I finally learned how to make them during yesterday’s late brunch session, they’re yummy!

1 tsp baking powder
1 egg
2 tbsp melted butter
1 cup plain flour
1 cup milk (to the right consistency)
1 tsp salt
fruit (sliced banana, apples, fresh berries…)
a dash of Grand Marnier or similar

Mix to a more viscous batter than the normal pancake batter and drop into a heated frying pan. No need to butter the pan after the first one. Add desired fruit (cinnamon is lovely with apples) on top, turn when golden brown. Serve fresh out of the pan. Eat with maple syrup if you want the full authentic experience, I find them lovely on their own, without added sweetness.
